COLOUR

Pale straw with subtle green hue. 

NOSE

Lemon curd, custard lime and wet slate and a touch grass. 

PALATE

Is crisp juicy and fine with textural qualities derived from some barrel fermentation and time of fluffy lees. 

WINEMAKING

Machine picked in the early morning from our Wills Domain vineyard. The grapes were gently destemmed and pressed and cold settled. Following settling 25% of the juice was naturally fermented in French oak barriques, and the balance fermented in stainless steel, and left on fluffy lees before being blended with the oaked compartment just prior to bottling.
