Mystic Spring Shiraz 2020

COLOUR
Vibrant deep brick red with purple hues. 

NOSE
Fresh lively and clean showing lovely, elegant mulberry notes.

PALATE
Big rich generous palate with fresh berries in the mid palate. The finish is savoury with rich juicy tannins. 

WINEMAKING
This Shiraz was sourced from the Wills Domain Yallingup Estate vineyard, and the Alan Rock vineyard in southern Yallingup. Machine picked in the cool of the morning and gently de-stemmed and cold soaked for 2 days prior to inoculation. Fermentation was allowed to warm up to 28 degrees before being cooling down to a cool 24 degrees. The juice was pumped over daily to maximize the colour concentration and favour, but without extracting any harsh tannins. Post fermentation the wine was left on skins for 5 days before being pressed and sulphured. Following maturation on French oak for 10 months it was fined filtered and bottled.
