Mystic Spring Semillon Sauvignon Blanc 2021

COLOUR
Pale straw with an attractive subtle green tinge.

NOSE
Lifted tropical fruits, with a touch of fruit tingle, limes & gooseberry.

PALATE
Elegant, fine and limey with juicy sweet fruit. The palate is long seamless with a refreshing persistent acidity.

WINEMAKING
The fruit for this wine was machine picked in the early morning to retain the delicate varietal aromas of the Semillon and Sauvignon blanc. The Semillon was sourced from our Wills Domain Vineyard, and the Sauvignon blanc from the Yallingup Estate Vineyard and the Warner Glen vineyard. Both varieties were gently destemmed, air bag pressed, settled, racked to ferment, and inoculated with a cultured yeast strain.  Fermentation was cool to maximize the delicate varietal aromas. Following fermentation, the wines were left of fluffy lees without SO2 for 4 months to enhance the complexity and mouthfeel. In July the wines were blended, protein and cold stabilised before being bottled in August 2021.
