Wills Domain Eightfold 2019 Chardonnay
Vibrant and fresh with complex notes of cashew, lime and
Generous and textured with mid palate sweetness and a lovely
lingering refreshing acidity.
Hand -picked in the cool of the morning and chilled in
cool room overnight before being whole bunch pressed directly to
barrels. As the juice warmed up in barrels, ferment commenced with
natural yeasts. Fermentation was cool and even at around 18 degrees C.
Once fermentation was complete the barrels were topped and
periodically stirred to enhance mouthfeel and palate weight. To further
increase texture 25% of the wine was inoculated with Malo Lactic
bacteria. Following Malo lactic fermentation SO2 was added to reduce
oxidation and then matured in barrels for 8 months prior to stabilization
and bottling in December 2020.
Poached / steamed marron, crayfish shellfish, rich fish
salmon tuna cod, creamy pasta.
