Pale straw with green tinge
Shows fresh lychees and gooseberry with subtle jasmine and lemon pith.
Soft fresh and clean with generous tropical fruits, sweet mid palate and a crisp lively acid finish.
Machine picked in the early morning and delivered to the winery less the 8°C. Gently de-stemmed and crushed directly to press. Settled on skim milk for 2 days, then racked to ferment. Fermented cool at <14 °C, for 10 days before being racked off gross lees, and allowed to sit on fluffy lees without SO2 for 2 months before being stabilized, fined and Cross Flow filtered. We have aimed to produce a tight fine Sauvignon blanc which has benefited from relatively high CO2 levels to produce some spritz on the palate.
