Wills Domain Mystic Spring Shiraz 2018
Deep brick red and purple.
Violets plum and raspberry with subtle overtones of herbs mint and cassis.
Is lively and fresh with a tight subtle acidity, the mid palate is juicy with rich soft lingering chewy tannins.
The fruit for this wine was sourced from the Wills Domain Block 6 Shiraz and Yallingup Estate Block 6. Machine harvested in the cool of the morning, the fruit was gently de-stemmed in order to introduce a percentage of whole berries in the fermenter. Cold soaked for 3 days, before being inoculated with a cultured yeast strain. The ferment was conducted relatively cool and allowed to warm to 25°C at the end of the ferment. To maximize colour and flavour extraction, the ferment was pumped over twice daily, introducing regular amounts of air, to encourage a healthy clean ferment. Following pressing the wine was racked onto French oak for 12 months prior to sterile filtration and bottling.
