Wills Domain Paladin Hill Matrix 2019
Medium deep brick red.
Plums berry /cherry, with olives and dried herbs.
Tight concentrated and restrained. The palate has sweet fruit and raspberry flavours, and lovely fine chalky tannins which persist in the mouth leaving a residue of lingering flavours. This wine is very much a product of the cool 2019 season, which has produced wines which are ” cool climate” in style. In general, this is a very fresh balanced and seamless wine which displays very subtle oak and the influence of a high percentage of Petit Verdot which serves bring greater weight and presence to the palate.
Sourced from our Wills Domain Vineyard in Yallingup, these 4 varieties that make up the Matrix blend were all picked separately via select harvester in the cool of the early morning. Following the onset of fermentation, we inoculated with Malo lactic bacteria and fermented relatively cool at 24degrees C . Primary and secondary fermentation finished simultaneously at which time the wines received SO2, before being racked to barrel. At blending we looked at all our Bordeaux varieties, but felt the best blend for 2019 excluded Merlot and was subsequently not considered for the blend. We trialed different percentages of the varieties but felt the increased percentage of Petit Verdot had a dramatic impact on giving the blend added weight and complexity.
