COLOUR
Vibrant purple.
NOSE
Perfumed, lifted with black currants, blueberry, lavender, and rosemary.
PALATE
Savoury, with a big chewy palate with soft lingering tannins which are slightly chalky. The French Oak is stylish and subtle which is beautifully integrated.
WINEMAKING
This Cabernet blend is sourced from the Wills Domain Vineyard in Yallingup. Gently picked and destemmed in the cool of the morning the fruit was cold soaked in fermenter allowed to warm naturally then inoculated with a cultured yeast strain. Fermentation was cool and slow, and at dryness was air bag pressed to barrel, where malo lactic fermentation was conducted in barrel. Following barrel maturation under cool cellaring conditions for 18 months the wine was blended filtered and bottled.
