Machine harvested in the cool early morning to retain fresh aromatics. Fruit was crushed, must chilled and pressed to tank under CO2 and SO2 cover, with freerun and pressings kept separate. Both parcels were floated, racked off gross lees and fermented together at 14-18°C in stainless steel using yeast to enhance aromatics and texture.
