Lifted complex blackberry and raspberry fruits with subtle elegant, attractive cedary oak
PALATE
Delicious and concentrated with a succulent savoury and berry mid-palate and plump, slightly chalky tannins that linger on the palate.
WINEMAKING
Our Paladin Hill Shiraz is sourced from our Wills Domain Estate Vineyard Block Five. This low yielding vineyard on a south westerly slope consistently produces outstanding concentrated low yielding shiraz. Gently harvested in the cool of morning, the fruit without crushing or destemming, was poured directly into small open-top fermenters. Following cool fermentation, the wine was pressed to mature in French oak puncheons before being filtered and bottled.

Slow-cooked lamb cassoulet, harmoniously accompanied by an array of meticulously selected, farm-fresh seasonal vegetables.
