Winemaking
Both the Chardonnay and Scheurebe were sourced from the Yallingup Estate Vineyard, with the Chardonnay picked on February 8th and the Scheurebe on February 21st. Both parcels were kept separate, gently pressed, briefly settled, and racked to stainless steel fermenters for a cool, slow fermentation using "Spark," a cultured yeast strain selected for the production of sparkling base wines. Fermentation took place at a cool temperature (15º–18ºC) over 15–20 days to achieve dryness. Once settled, a very small amount of SO₂ was added before blending. The wine was then coarsely filtered and tiraged as soon as possible after fermentation to preserve freshness. The tirage process began in July 2023, with the wine left on lees for over 16 months to enhance complexity and yeast autolysis before being disgorged, liquored, topped, corked, and labelled.
