COLOUR

Pale straw, lovely green tinge.

NOSE

The aromas are generous, rich, and alive with seductive notes of vibrant limes. Subtle briny nuances and hints of background herbs add complexity to the bouquet, making this wine very inviting.

PALATE

On the palate, this Semillon is plump, juicy, and round, offering a creamy texture that is very typical of the Semillon styles coming out of Margaret River. The wine's rich and vibrant flavours are beautifully balanced and complemented by the lingering fresh acidity.

Winemaking

This wine is sourced from the Wills Domain Estate vineyard in Yallingup, which consistently produces outstanding Semillon. As a consequence of the warm and dry spring and summer, this fruit was picked in the second week of February, some two weeks earlier than normal. Gently hand-picked in the cool of the morning, the fruit was destemmed and pressed immediately before being settled, racked, and inoculated with a cultured yeast strain. Fermentation was cool, typically 13°C–15°C, which served to preserve the limey and zesty varietal characters. After fermentation, the wine was racked and left on fluffy lees for 12 weeks before being fined, filtered, and bottled in early July.
