Winemaking
Semillon was sourced from Wills Domain estate vineyards, while the Sauvignon Blanc came from a couple of vineyards in Karridale. To retain fresh, vibrant aromatics, all fruit was harvested in excellent condition during the cool of the night, capturing a range of varietal expressions with intense flavours. To aid processing and preserve fruit intensity each batch was crushed, must chilled and pressed to tank. Following fermentation, the batches were lightly fined with PVPP, racked and blended. The wine was heat and cold stabilisation, followed by filtration in preparation for bottling in May.
Food Pairing
Grilled prawns or scallops with a lemon herb dressing, a fresh goat’s cheese and asparagus tart or zucchini, pea and mint risotto.
