When Darren Haunold, Managing Director, founded Wills Domain in 2000, he resurrected a family legacy that stretched back to medieval European roots, when the Haunold family were royal wine negotiants. Winemaking is in Darren’s blood, along with a tradition of generous hospitality and deep appreciation of the freedoms within modern Australian gastronomy.

Jed Gerrard

After tenures as executive chef at COMO The Treasury Hotel and The Ritz-Carlton in Perth – as well as steering restaurants Wildflower and Hearth to multiple Chef’s Hats and other awards - Jed now leads Culinary Direction at the Yallingup Restaurant. He manages our talented and passionate team at Wills Domain, led by our very talented on site Chef de Cuisine, Sergio Labbe. Both Jed and Sergio are passionate about locally sourced, sustainably harvested, seasonal produce and work hard to create the most celebrated fine-dining experiences in Margaret River.

Ely Jarvis

Eloise brings over 25 years of winemaking experience to Wills Domain, having worked across some of Australia’s most renowned wine regions as well as internationally in California and South Africa.

Her career began in Margaret River with her first vintage at Cape Mentelle in 1996. She went on to hold senior winemaking roles at Cape Mentelle and Fonty’s Pool Vineyards before founding Margaret River Wine Solutions in 2013, consulting on vineyard and wine quality for local producers, further showcasing her talent for crafting site-driven, expressive wines.

A champion of sustainability, Eloise has played a key role in advancing environmental best practices across Western Australia’s wine industry. Her leadership in Sustainable Wine growing Australia and dedication to balancing vineyard health with quality winemaking align perfectly with Wills Domain’s philosophy.

We are excited to welcome Eloise as our new Winemaker and look forward to the next chapter of innovation and excellence at Wills Domain.
