Winemaking
Shiraz from a Wilyabrup vineyard was hand-picked in the cool of the morning to retain fresh, vibrant aromatics. To minimise colour pickup and preserve fruit intensity, the fruit was crushed, must chilled, and pressed to tank under CO₂ with SO₂ added. Free-run and pressings were kept separate, with pressings carbon-fined to reduce colour. Both batches were floated, racked off gross lees, and cofermented to enhance aromatics and texture. Fermentation was maintained at 13–16°C. The wine was stirred on lees including a small portion of Chardonnay lees for three weeks, then stabilised and filtered ahead of bottling in May.
