PALATE

Crisp and juicy, with red fruits carrying seamlessly from the nose. Soft floral notes and a touch of sweet herbs interplay with lemon zest, while a supple, talc-fine texture lends elegance through to the finish. Lovely intensity and length light on its feet and thoroughly refreshing.

Winemaking

Shiraz sourced from Wills Domain Block 6 and Allen Rock Vineyard, Wilyabrup. Machine harvested in the cool early morning to retain fresh aromatics. Fruit was crushed, must chilled and pressed to tank under CO2 and SO2 cover, with freerun and pressings kept separate. Both parcels were floated, racked off gross lees and fermented together at 14-18°C in stainless steel using yeast to enhance aromatics and texture. The wine was stirred on lees with a small addition of chardonnay lees for three weeks, before heat and cold stabilisation, filtration and bottling in May.

A classic Provençal Niçoise salad with seared tuna, green beans and olives; a Vietnamese chicken salad with fresh herbs, pickled vegetables and nuoc cham; or fresh prawn ceviche with lime, chilli and crispy corn.
