The Restaurant has a refined, industrial feel with a focus on sustainable, wild-harvested produce. This food philosophy is championed by Culinary Director Jed Gerrard and Chef de Cuisine Sergio Labbe.
Their combined efforts continuously improve The Restaurant’s offering, and make joyful use of the estate’s gardens (and even vine rows) to add unrivalled garnishes and aesthetic flourishes to our menus.

After tenures as Executive Chef of COMO the Treasury and The Ritz-Carlton, Perth, and steering restaurants Wildflower and Hearth to multiple Chef’s Hats and awards, Jed Gerrard came to the South West with a fresh direction and revamped menu for our Yallingup Restaurant. Jed manages our talented and passionate team at Wills Domain, led by our Chef de Cuisine, Albee Lee. Both Jed and Albee are passionate about locally sourced, sustainably harvested, seasonal produce.
