NOSE
The bouquet is pure lively and fresh . Aromas of spice and floral mingle with honeysuckle and a hint of passionfruit creating an enticing and complex nose.
PALATE
On the palate this Sauvignon blanc offers subtle tropical flavours complemented by the flavour and crispness of Granny Smith apples. A mid palate sweetness adds to its charm, creating a ripe and complex profile. Winemaking
This wine was sourced from the Rainbow Fountain Vineyard in Karridale, about 25 kilometers south of the Margaret River township. Being so far south, this vineyard experiences higher rainfall, cooler temperatures, and more cloud cover. These southern vineyards produce fruit with greater purity and higher acidity. Picked in midFebruary, typically two weeks earlier than normal, the fruit was gently destemmed and pressed immediately before being settled and racked for fermentation. A cool, slow fermentation at 13ºC ensured the retention of delicate fruit flavours. At the end of fermentation, the wine was racked and allowed to sit on fluffy lees for three months before being fined, filtered, and bottled.
