Winemaking
74% of this wine is sourced from the Wylco Vineyard in the Karridale subregion, approximately 20 kilometres south of Margaret River. The fruit is from Block 3, planted on lighter soils with a northerly aspect and east–west rows. This block typically produces more generous and forward wines compared to other blocks on the site. The remaining 26% of the blend comes from Blocks 7 and 13 of the Wills Domain Vineyard. Harvest dates were late January for the Wills Domain blocks and the second week of February for the more southern Wylco fruit. All fruit was hand-picked and chilled overnight before being whole-bunch pressed and racked to barrel with a modest level of natural solids. Fermentation was carried out with natural yeasts, and after fermentation the wine was matured in barrel for a further eight months before being fined, filtered, and bottled in December.
Food Pairing
Poached or steamed marron, or in a creamy pasta filled with crayfish, shellfish, salmon, tuna, or cod.
