Winemaking
This 100% Shiraz was sourced from two contract growers in the Wilyabrup and Yallingup sub-regions of the Margaret River. Picked gently by hand in the cool of the early morning in the first week of April, these two fruit parcels were vinified separately and blended just prior to bottling. Fermentation took place in enclosed static fermenters at 22º–28ºC with gentle pump-overs twice daily, with fewer pump-overs as the wine approached dryness. Once sugar was dry, the wines were racked and matured on French oak for nine months before being blended, cross-flow filtered, and bottled.
Food Pairing
Velvety tomato-infused orzo, enriched with luscious artichokes and creamy ricotta.
