Tasting Notes
COLOUR
Pale straw with a subtle green tinge.
NOSE
The aromas, as of January 2025, are showing elegant limes and minerality, but will continue to evolve as the wine develops in the bottle. Complementing these characters are some restrained and understated spicy French oak aromas.
PALATE
Show upfront salty and briny flavours, complexed with nutty and brioche overtones. The palate is concentrated with great weight, finishing with a fresh, clean, lingering acidity.
Winemaking
53% of this wine is sourced from the Wills Domain Yallingup Vineyard Blocks 7 & 13, with the balance coming from the Wylco Vineyard in Karridale, a cooler, more southerly vineyard that introduces some mineral, briny components to the blend. The fruit from all blocks was hand-picked and chilled overnight before being whole-bunch pressed and racked to barrel with a modest level of natural solids. All blocks were picked much earlier than usual, with Block 13 being picked in late January and the Wylco Block on February 12th. Fermentation was undertaken with natural yeasts, and following fermentation, the wine was left to mature in barrel for a further eight months before being fined, filtered, and bottled in December.
