Tasting Notes
COLOUR
Pale pink with a delicate sunset blush
NOSE
Vibrant and inviting, with fresh watermelon and raspberry lifted by a pretty floral note and bright cherry. Lemon sorbet and subtle mint add precision and energy to the bouquet.
PALATE
Generous and soft with flavours of granny smith apples and lime. The palate is fine and tight with fresh mid-palate fruit sweetness, a touch of spritz, and a clean, refreshing, lingering finish.
Winemaking
Shiraz sourced from Wills Domain Block 6 and Allen Rock Vineyard, Wilyabrup. Machine harvested in the cool early morning to retain fresh aromatics. Fruit was crushed, must chilled and pressed to tank under CO2 and SO2 cover, with freerun and pressings kept separate. Both parcels were floated, racked off gross lees and fermented together at 14-18°C in stainless steel using yeast to enhance aromatics and texture. The wine was stirred on lees with a small addition of chardonnay lees for three weeks, before heat and cold stabilisation, filtration and bottling in May.
Food Pairing
Ripe tomatoes and creamy mozzarella layered with fresh basil, finished with a drizzle of olive oil for a simple, vibrant classic.
