PALATE
Refined and textural, the palate is generous of flavour - white florals, nectarines, and a squeeze of citrus juice. Layered and complex. Fresh creamy lees, saline minerality, a touch of flint, and pithy phenolics tie it together. Satisfying and long.
Winemaking
Crafted from Gingin and Clone 5 Chardonnay grown in the cool southern reaches of Margaret River, this fruit was harvested in excellent condition at optimal ripeness. A portion was hand-picked and whole-bunch pressed, while the balance was gently harvested in the cool of night to preserve freshness and purity. Fermentation occurred naturally in a combination of barrel and tank, enhancing complexity and building layered texture. The wine was matured in barrel for nine months, with regular lees stirring to integrate oak and develop a creamy mid-palate while retaining vibrant natural acidity. Following careful barrel selection, the final blend was prepared and bottled to capture the elegance, intensity and poise that define Margaret River Chardonnay.
Food Pairing
Edamame gyoza with yuzu Ponzi sauce as a vegan option. Pan-seared trout with tahini sauce, charred lemon and za'atar roasted cauliflower, or a creamy lemon and herb risotto with pan-fried chicken and rocket salad.
