PALATE
The palate opens with a juicy, energetic entry that gives way to a supple, textural mid-palate threaded with stonefruit and white blossom. Pure and precise, with a fine mineral line carrying the wine to a long, seamless finish. The hallmark of Margaret River's finest Chardonnay - intensity, elegance and poise in equal measure.
Winemaking
This wine showcases two Margaret River vineyard sites, featuring Gingin clone Chardonnay from Wills Domain Blocks 7 (37%) and 13 (22%) in Yallingup, and Wylco Block 1 (41%) in Karridale. Fruit was hand-harvested at optimal ripeness, whole-bunch pressed, and wild-fermented in barrel with 200–450 NTU solids to enhance texture and complexity. SO₂ was added post-fermentation to prevent malolactic fermentation. Batches were matured separately for nine months with regular lees stirring, then barrel-selected, blended, stabilised, filtered, and bottled in December.
Food Pairing
Freshly shucked oysters with lemon and finger lime pearls, grilled Margaret River marron with white miso butter, charred corn and warrigal greens, roasted king oyster mushrooms with white bean purée, preserved lemon and fresh herbs.
