Winemaking
68% of this Cabernet is sourced from the Wills Domain Vineyard, with the rest from the adjoining Yallingup Estate in the Gunyulgup Valley. Hand-picked in the cool of the morning in mid-April before the late April rains, the grapes were destemmed and fermented in closed-top fermenters at 22º–28ºC for 14 days. They were then macerated on skins for seven days before being pressed and racked into barrels for malolactic fermentation. In June, the wines were racked, returned to barrels, and matured in cool conditions before being blended, filtered, and bottled in February 2024.
Food Pairing
Greek-style barbequed lamb steaks with tzatziki sauce.
